Spaghetti sauce with oregano flavor

Ingredients:

  • Olive Oil: 2 1/2 tablespoons
  • Onion: 1
  • Garlic cloves: 3
  • Red pepper: 1/5 teaspoon
  • Tomato puree: 28 ounces
  • Tomato Sauce: 2 cans
  • Oregano seasoning: 1 1/2 teaspoon
  • Sugar: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Black Pepper: 1/2 teaspoon
  • Bay leaves: 2
  • Parmesan cheese: 2 small cubes

I do not know whether it is the playfulness quality that a spaghetti dish has or simply that it is so soft, but it is an absolute favorite of every member f my family. From my 35 year old husband to my 8 year old daughter (and her two older siblings), everybody, although they are not associated with Italian culture or tradition, still love the spaghetti with some home made sauce. Well, I will not be honest if I said that I did not know at all, I think I have an idea of what it is that makes them love the spaghetti sauce recipe that I cook at home. Being a stay at home and having three kids has led me to believe that it is more important to understand the flavors that people whom you are serving like.

I can serve anything (vegies, meat, a simple soup with bread), as long as it has the flavor that my kids like. I have done my share of experiments to discover how to mix flavors without losing the taste. The one common taste that we all like is that of the oregano. The oregano jar is the one which I never let go empty. From curries to pizza tops, we are used to having this familiar taste in everything. It is what means home cooked for my kids and husband. The reason that my spaghetti sauce recipe has become so popular with them and other friends is also the healthy seasoning of oregano that I add to the sauce while preparing it.

Also, in my recipe, I use home cooked meatballs but I have tried and the store brought ones will also fit in well with this recipe. Just that the store brought ones need to either be de-frozen or completely cooked so they will take some time. But do not worry the cooking process for meatballs can happen when you put the meatballs in the sauce while it is simmering. The simmering of the sauce is like the more you do, the better it is. Just remember that the sauce should not go dry, that is the layman signal for you to know that you are overdoing it. Adding some water is not always a solution out of this problem. I am in no sense an expert, all I know is that this is the spaghetti sauce recipe that my family and friends love and I hope that if you try this, you will also have a similar positive experience. Let us begin:

  1. Start with a medium sized saucepan or a skillet on medium heat on the stove. Add olive oil and allow it to heat up in a few minutes.
  2. Depending on how you like it, chop, grate or blend in the carrots and the onions and add to the heated olive oil in the pan. Turn the heat to low.
  3. If added in chunk, let the mix cook for 5 minutes otherwise after a couple of minutes, add crushed garlic gloves.
  4. Throw in the red pepper or chilly pepper and stir it into the mix. Let it cook for a minute or so.
  5. Now is the time to add the chief flavor here, the oregano with all the remaining ingredients. Leave the sauce to simmer at this point for at least 15-17 minutes.
  6. You can utilize this time to either cook the meatballs or the pasta of your choice (if you already have the cooked meatballs from store).
  7. Once you add the cooked meatballs, allow some time for them to absorb the flavor goodness of the sauce and let them become completely filled with juice. I usually test that by pressing one with a spoon.
  8. Now the perfect spaghetti sauce with some meatballs is ready for you to serve on or with pasta.
